The Plus is the bigger upgrade: it adds a 12.6-inch brighter display, a MediaTek Dimensity 9500 chip, and a 10,600mAh battery in a thinner, lighter body than the two-year-old Tab S10 Plus.
The Ultra is a lighter refresh, keeping its 14.6-inch screen, 11,600mAh battery and 5.1mm design while mainly adding a newer chipset and four-channel spatial audio.
Both tablets offer 1,600-nit OLED displays, IP68 protection, seven years of Android updates, and an included S Pen.
Samsung is also using the launch to bring Adobe Photoshop for Tablets to Android first, with a six-month Galaxy Store exclusive and S Pen support.
